Does your little come home hungry? Yes, mine too. Periodically, I’ll make these frozen macs. I wished it was more often than not. This is a homemade mac & cheese, topped with a homemade seasoned Panko breadcrumbs. <br />If you know me and have seen me cook…I don’t measure. I just add this and that. I’m going to quickly tell you a guesstimation, a good guesstimation of the ingredients amount.<br />Recipe~<br /><br />Pasta~<br />12 ounces of your favorite pasta, cook aldente<br /><br />Ingredients for cheese sauce~<br />3 tablespoons of butter<br />3 tablespoons of flour<br />1/4 teaspoon turmeric powder<br />1/2 teaspoon of garlic powder<br />1/2 teaspoon of onion powder <br />1/2 teaspoon of salt or one cube of chicken bullion (I used 1 teaspoon of Better than Bullion)<br />2 cups of milk <br />1 cup pasta water<br />1/4 cup of cream cheese <br />2 cups of shredded cheddar cheese<br />are use a 2 to 3 quart pan. Melt butter, add the flour stir with a whisk. Once butter and flour Inc. add the spices.Add the milk and whisk, add the cream cheese and the bullion. Whisk gently. Once it looks smooth add the pasta water and the shredded cheese. Flame should be low to medium, let the cheese sauce bubble.<br />add the pasta to the sauce. Stir gently until pasta and cheese or nicely married. It’s ready. <br /><br />Ingredients for Panko breadcrumb topping~<br />1/4 cup of breadcrumbs <br />1 tablespoon butter <br />sprinkle of salt and pepper <br />1/4 teaspoon of Italian seasoning<br />Add all ingredients to a dry pan, fire medium. Gently stir and keep a close watch, once pan gets hot all the breadcrumbs start to brown. I like a toasty brown look but you can keep it lighter or darker. Your preference of taste is the right taste.<br />Sprinkle on the mac. <br /><br />When freezing portions, make sure your ramekins are freezer and oven proof. This soup is my comfort food. My Mom made this at least twice a month with a side of the spiciest 'chile macho'...which is: roasted peppers (green chile, jalapeños or serranos), peeled and chopped with fresh chopped onion & fresh diced tomato. Similar to a pico de gallo except the peppers were roasted vs fresh. The stuff Mexican foodie dreams are made of. </div>

Once my Mom no longer cooked due to Alzheimers my Dad started cooking. Growing up he cooked outdoors in a wood burning stove. Big meats were his speciality (whole lamb, freshly butchered pig, fresh chicken etc...)and relied on my Mom to season the dishes. When she no longer could he did a great job of it. I miss them both dearly. Carmella's first taste of food/broth at 5 1/2 months was Goat Soup that my Dad made. He spoon feed her the broth...she loved it. Big love. </div>

3 cloves of garlic, whole</div>

Cook all the above ingredients in a dutch oven 1 1/2 hours/slow cooker 4 hours on high/pressure cooker 30 minutes plus allow pressure to release naturally. Whatever you feel comfortable cooking soup in. </div>

Once fully cooked and chicken is pulling from the bone remove the chicken, onion & carrots with a slotted spoon. DO NOT discard liquid/broth. This is liquid gold. Once chicken is cool, fully debone it. Taste your broth at this point, season to taste with salt & pepper. </div>

Side note: I like to keep the cooked skin and broil it till crispy, about 5 minutes under the broiler. Everyone's fav, it'll be yours too. Promise. </div>

Tastes like it cooked for hours. This summer I used the <a href="http://instantpot.com/" target="_blank">Instant Pot</a> non stop, bought it on <a href="http://www.amazon.com/Instant-Pot-IP-DUO60-Programmable-Generation/dp/B00FLYWNYQ/ref=sr_1_1?ie=UTF8&qid=1443636118&sr=8-1&keywords=instapot" target="_blank">amazon</a>. It produces very little heat, big plus and it's the only electric pressure cooker with a stainless steel tub on the market (others are non-stick). It'll change your life. The pressure cooker changed my life a few years ago and honestly, I never thought I'd go electric. I started reading reviews on this particular one and they were all I wanted that I had no idea I wanted. XO. </span><br />

<span style="font-family: verdana; font-size: x-small;">3 T tomato paste</span><br />

<span style="font-family: verdana; font-size: x-small;">1 med-lg onion, chopped</span><br />
<span style="font-family: verdana; font-size: x-small;">2 celery stalks, cut into 1" chunks</span><br />
<span style="font-family: verdana; font-size: x-small;">5 carrots, cut into 2" chunks</span><br />
<span style="font-family: verdana; font-size: x-small;">6 garlic cloves, whole</span><br />
<span style="font-family: verdana; font-size: x-small;">2 cups water</span><br />

<span style="font-family: verdana; font-size: x-small;">Press the saute option. Once it feels hot...1-2 minutes, add oil and 1/2 the ribs. Brown. Remove once browned, add the remaining ribs. Brown. Remove. Leave oil in tub. Add onion, celery and garlic. Saute for 4 minutes. Add tomato paste, saute for 3 minutes (stir). Add ribs, thyme, rosemary, salt, pepper and water into the cooker. Now cancel saute and pressure cook for 30 minutes. I like to let the pressure release on it's own...this can take 10 minutes after the 30 minutes of pressure. Once pressure is down I add the carrots at this stage and pressure cook for 4 minutes (you can add potatoes or sweet potatoes, if you like).</span><br />

These lovely mommies loved the homemade snacks I'd make when I hosted playgroup and so it began. My first client was Kelly Gordon, thank you! Why did I not think of this sooner? Today a light bulb turned on when I was cleaning the bottom kitchen drawer...mind you the only bottom drawer. I have a 1931 kitchen...3 cabinets and 3 drawers. I live with a voice inside my head "Darlene what's wrong with you? Please be tidier." Then I delightfully respond to the voice "self please, the kitchen is tiny I'm just doing the best I can ❤️". </div>

My 8 year old, Carmella, has been helping me set the table daily for the last 4 years. I normally hand her the china and drinking glasses. She can reach the silverware, napkins and filtered water. Today all that will change, she will now be able to set the entire table all by herself. She's good at it too. All china is set right side up if there is a design, plate straight if squared, water to the right, fork and napkin on the left, spoon/knife if needed on right. I showed her the drawer and she was pleased. Next I'll have her load the dishwasher, currently she's still to short to navigate the sink water properly.</div>

A Christmas Post...<br />
It's Christmas! What a beautiful day. Woke up, made breakfast. Mass at noon. Christmas lunch at 2pm. After lunch we spent the day in the back garden till dusk. Grateful for my family, friends and acquaintances.<br />
My niece, Clarissa, just had a baby boy on the 23rd. I made little hobo turkey packets from our leftover Christmas lunch for her. These can be put directly into a oven, 375F 20-25minutes. <br />
Normally I just freeze the items separately, however, I was trying to think of a method of getting Clarissa small meals to have on hand. Then the idea came...leftover Turkey dinner hobo packets. We're a bit alike in that neither of us use a microwave. We both have Breville ovens that we use daily, several times a day. These packets will work just fine for a new mom. I'm freezing them and will deliver tomorrow. Babies are a gift. So grateful. xoxo. <br />

In a dutch oven bring the OJ, sugar and vanilla pods to a boil. Add the apple cubes, boil for 10 minutes. Add the cranberries, boil for 10 minutes. Add the zest or extract. </div>

Heat skillet medium-high. Add EVOO. Once pan is hot add seasoned Tilapia (I tent a piece of foil on top of skillet to catch oils). Once the thinnest part of the tilapia looks a bit crisp (about 2-3 minutes), flip, cook for 2-3 minutes. Put filets on a cookie sheet and set in 200F oven to keep warm. Do not wash the skillet!<br />

1/4 onion sliced</div>

3 minced garlic cloves</div>

fresh cracked pepper</div>

3 T pecorino grated (Parmesan works well) </div>

Saute onions 3 minutes in the same skillet, keep flame medium-high. Add garlic, saute for 1 minute. Add spinach and cover, once it's wilted add cream. Once cream has warmed to skillet temperature turn off the flame, add pecorino and cracked pepper. No salt (Pecorino & Parmesan are salty cheeses). <br />
serves 2 and a little one<br />

A year old promise is finally fulfilled. The first time I learned my daughter wanted her own puppy was at a Daisy Girl Scout Meeting. The subject of this meeting was 'value of money'...learning how to save. Each Daisy was given a mason jar with a slot on the lid, the jars were decorated with stickers and a label was attached for each girl to fill out with their name and what they were saving for. Bebe wrote in "pupie". My first thought was 'wow, she's never mentioned this I wonder if she couldn't think of anything else' then I asked her if she meant it. She said 'yes, I want a poodle'. Stop. Hold up...we have a pooch, Coco (dachshund). BUT, Coco thinks she's the boss of Bebe...she will not lend herself to be petted and cuddled by Bebe. Coco was caught by surprise when Bebe came home from the hospital, she was like 'hold me not that!'. Before Bebe came into the picture I would wear Coco around my neck like a scarf, that pooch was spoiled...she still is just no longer naps around my neck. Once I talked to Papa about a puppy we both agreed Bebe should have her own puppy because we saw how she wanted to love Coco. Coco's mohawk would stand up and she'd snap at Bebe when she'd go to pet her. She never hurt Bebe but she'd scare her...and me. The date was set 'Valentine's Day'. Bebe saved $32.73, Papa told her she could contribute $5 toward her new pet and Bebe said, "no all of it". <br />

Meet Perla Camille she is so gentle. Bebe and Perla are in love. She was due for a fresh bath today so I decided to see what natural homemade dogie shampoos are online. Found one that I had all the ingredients for. It's nice. She smells lemony fresh. </div>

We have 2 giant <a href="http://en.wikipedia.org/wiki/Pecan" target="_blank">pecan</a> trees, Respiro and Cielo, one healthy (Respiro) and one sickly (Cielo). 18 months ago our tree trimmer, <a href="http://www.lovetttreeservice.com/" target="_blank">Lovett</a>, told us the leaning pecan tree was dying...gentle oozing was taking place at the root. My husband thought he would possible heal it but the problem was bigger than it was visually. We were in bit of denial about Cielo's illness (still produced pecans and beautiful shade) and the expense to remove it. Every windy and stormy night I'd pray "Cielo please don't topple", toppling would mean: uprooting buried water lines, falling on the neighbors house, possibly hurting someone, ruining a garden...just chaos. We are sad to see Cielo cut down. </div>

I love homemade hummus. Yes, only homemade or fresh from a Mediterranean restaurant. I can taste the citric acid powder and the rancid tahini in store bought. Oops...guilty I'm a hummus snob. You'll be one too once you compare the two. Tahini is a puree of sesame seeds and oil. Making tahini is so easy you'll never buy it again. Nuts and seeds are highly sensitive to light, time (on the shelf) and heat. When I open up a new can of tahini it smells rancid...any and all brands. No thank you. I make my own tahini which gives hummus a nice fresh toasty bite. Making a variation of hummus is what I tend to do. A craving sneaks up on me, when I decide I want hummus I want it that very minute...so I use what I have. If I do not have sesame seeds I will use pumpkin seeds (pepitas), walnuts, pinon or cashews. I toast them first on the stove top or in the toaster oven with a little oil and salt. Nuts and seeds tend to absorb heat very quickly, so keep an eye on it. Once the nuts or seeds I'm going to use are toasted I put them in the blender with some extra virgin olive oil (first cold press). Puree. Now add all other ingredients to blender.</div>

1 lb 13 oz can of garbanzo beans/chickpeas drained or freshly made<br />
1/4 cup of toasted tahini/pepitas/walnuts/pinon/cashews (choose what you have or what you love)<br />
1/4 cup of liquid the garbanzo beans were in (or water)<br />
1/4 cup of EVOO (extra virgin olive oil)<br />
3 cloves of garlic<br />
2 t ground cumin<br />
1 lemon juiced - medium to small<br />
salt & pepper to taste <br />
Add all ingredients to the blender.<br />
I prefer the result of pureeing in a blender vs a food processor. Super smooth.<br />

Variations: add roasted and peeled jalapenos, Serrano, green chile or you favorite pepper. My favorite is Serrano...I like it spicy!<br />

Skillet on medium-high. Add a sliver of butter & a drop of EVOO. Whisk eggs, salt, pepper, onion & garlic...add to pan. Drop heat to low. Pierce egg round, once it's lightly cooked & running add cheddar, top with broccoli. Broil for 2-3 minutes. Enjoy!<br />

The earthy scent of poblano peppers roasting is intoxicating, you can almost taste the air. They're not spicy but they have a big earthy pepper taste. I saw a food photo of a breakfast poblano on instagram and thought 'Yum, let me create my own'. It turned out delicious! I will be making this again and again. I can visualize it now breakfast for 2 or brunch for 15+ this will be the star of my next brunch gathering. </div>

Heat a skillet, add oil. Set the 2 poblano halves in the skillet add the sauteed sausage, onion and spinach evenly to each half. Top each half with an egg. Salt and pepper. Cover for 5-7 minutes, once you smell the poblano toasting, top with cheese and broil uncovered for 3 minutes. <br />

I have a new love in my life. I have been eating/drinking chia seeds since August of 2012. I have become the girl you've read about that is not the perfect weight but is healthy. The only time I've ever had high blood pressure was the day after I gave birth to my daughter, that lasted 1 full day. Now on the other hand my cholesterol has always been an issue I have battled and a vitamin D deficiency (over the counter daily dosage of 200IU was recommended). This past year my Doctor insisted I get on a low dose cholesterol medicine, my response was 'give me 3 months let me try and get it down myself'. Three months came much too soon and trying to go vegan was not the answer for me. The vegan phase lasted maybe 3 days. I went back for my lab test and sure enough it had only lowered 4 points 231 to 227...Doc wrote me a prescription. I am so naughty I did not fill it (I don't recommend this). That was in July. I was to return in October for labs again. Having that prescription in hand and not filling it consciously made me aware of my issue...every minute! I had to do something. 'Just try something' was constantly on my mind but I did not know what that something was. I researched a natural way of lowering cholesterol...so many recommended methods. I chose chia seeds after reading several testimony's online about how chia seeds aided in lowering cholesterol. The suggested serving is 1 Tbsp daily. August I started drinking a chia water every morning. 1 cup of water 1 Tbsp of chia seed...mix and drink. I don't mind the texture or mild taste knowing what the results may be. The Doctors office called to schedule a follow up in October, by this time I'd been drinking my daily chia water 5-7 times a week. I went in a bit scared because I knew my Doctor would be asking me about the cholesterol medicine and such. Sure enough that was his 1st question...I nervously giggled and said "don't fire me, I have not been taking it but I am taking my vitamin D". Sweetly he said "I'm not gonna fire you"...I told him my fears of prescriptions that I read on the Internet about wearing out my organs more importantly my liver...he said "I would never prescribe you something that would affect your liver...I did not get my Doctors degree on doc md." I roared with a laugh...the air was clear. I never mentioned I was taking chia seeds because at this point I felt like he already thinks I'm a bit crazy now he's really gonna think I'm a nut. I had all the labs done that day...2 days later the nurse calls me with the results. Cholesterol 161!!!! Vitamin D in range!!!! I hung up the phone and screamed!!!! Screamed and laughed...why was this so funny? I do not know but this was my reaction, I was thrilled. Since then chia seed and I have been in love. I still take it daily and have started making aquas frescas (fresh flavored waters) with it. I have read and read about chia. I'm so happy with this <a href="http://en.wikipedia.org/wiki/Chia_seeds" target="_blank">sacred Aztec superfood seed</a>. My favorite chia is the organic version, it seems to rate higher in fiber vs the conventional...this is packaging information. <br />
